    For best results; remove all items from the freezer and allow to thaw in the fridge for 24 hours. To cook the Pork Belly, preheat a fan forced oven to 250°C, remove the pork from the vacuum pouch and place on a lined baking tray. Pat the pork skin with a paper towel to remove any excess moisture. Spread a generous amount of olive oil over the skin ensuring to rub in all scores. Rub in a generous amount of sea salt to skin. Place in the oven for 45 - 55 minutes or until crackling has formed. Remove from the oven and stand for 10-15 minutes before serving. To reheat the Cassoulet, place the contents of the pouch in a pot and place on low/medium heat. Cover pot and bring to a simmer. When heated through, remove pot from heat and serve with pork belly.

    Amazing!

    This meal was absolutely amazing. The pork was beautiful and the crackle was perfect. The winner here for me was the cassoulet... I have since ordered it twice as a side dish.

    Perfect crackling

    The pork was moist, melt in your mouth perfection with amazing crackling. The cassoulet was reasonably close to what I’ve had in Paris.
